A classic blend showcasing the best of Paso Robles terroir. This full-bodied Cabernet Sauvignon (80%) and Petit Verdot (20%) blend is sourced from premier Paso Robles vineyards, including 40% estate-grown Cabernet Sauvignon, 40% from the esteemed Paper Street Vineyard, and 20% estate-grown Petit Verdot. Grapes were hand-harvested in October 2021, with 60% coming from the Geneseo district and 40% from Willow Creek.

Meticulous winemaking elevates the exceptional fruit. Night harvesting ensured optimal coolness and flavor preservation. Following a two-day cold soak, the grapes fermented in open-top fermenters for two weeks. Gentle pressing and malolactic fermentation in new French oak barrels were followed by 22 months of aging. Bottled unfined and unfiltered to maintain its purity.

Rich and complex flavors define this exceptional wine. Boasting a 15.5% alcohol content, the 1888 Cabernet Sauvignon offers pronounced aromas and flavors of black cherry and currant, interwoven with hints of chocolate, mint, and a subtle spice of black pepper.
